It is FREEZING in Vancouver this week! What better way to warm up than with a steamy bowl of delicious green soup? This recipe is SOUP-er easy and SOUP-er nutritious!

Ingredients:
  • 1 tbsp olive oil
  • 4 cloves of garlic, finely diced
  • 6-7 organic collard greens leaves, chopped
  • 1L of water
  • 1 cube of vegetable stock
  • 3 celery stalks, chopped
  • 1 acorn squash, cubed
  • 2 tbsp green onion, finely chopped
  • 1 bay leaf
  • 2 dashes of cumin
  • chives for garnish
In a medium sauce pan, heat up the olive oil over medium here and sautee the garlic and collard greens until the garlic is soft and smells heavenly.
Add in the water, and the remaining ingredients (except for the garnish, or course) and bring to a boil.
Lower heat to medium and continue cooking until the squash is soft.
Blend soup until creamy.
Serve and enjoy!
